The coffee
Pacamara is a rare hybrid variety, known for its large beans and distinctive character. Grown at high altitude on volcanic soil, it matures slowly, developing depth and structure.

 

Taste
Aromatic notes lean toward milk chocolate and delicate marzipan, giving the first impression warmth and sweetness.
On the palate, the cup opens with cherry and yellow stone fruit, accompanied by soft cocoa tones and hints of coffee blossom. The structure is crisp and tea-like, with a refined clarity that keeps the profile elegant rather than heavy.
Acidity is present but controlled, supporting a clean, slightly savory finish where fruit and chocolate nuances linger with balance and precision.

 

Processing & roast
Carefully washed to preserve clarity while allowing the variety’s natural complexity to remain intact. Roasted in small batches to emphasize structure, depth, and balance.

Our coffees are roasted in small, scheduled batches.
Each coffee follows its own rhythm to ensure freshness and consistency.


Pacamara is roasted every two weeks.
Orders are included in the next scheduled roast.

 

Brewing
Recommended for filter brewing.
Filter — V60, Chemex, French Press
Dose: 15 g coffee to 225 ml water
Water temperature: 94–96 °C
Grind: medium-fine for V60 and Chemex, coarse for French Press
Brew time: 3.5–4 minutes
